Description
Learn how raw food, both savoury and sweet can not only be healthy but totally delicious! Foods are classified as raw if the heating temperature does not exceed 45C, as it does not destroy the enzymes in the food. Whether you are interested in a completely raw diet, want to add a few raw dishes to your meal repertoire or you just want to get to know a different way to be creative with food, this workshop teaches you how to prepare plant based raw dishes that are not only healthy, but totally delicious, but also are adaptable to your own taste if required. Raw cakes and raw desserts foods are generally desserts made from a blend of nuts, seeds, coconut and cacao products, fresh and dried fruit, natural sweeteners such as maple syrup, and plant-based milks such as almond or coconut and spices. You will learn how to make easy raw desserts that don’t involve any soaking, sprouting, dehydrating or thinking much in advance at all as well as the basics of some more advanced cakes that will require more preparation time. We will make nut and seed cheeses, raw breads, raw chocolate cake, blueberry cheese cake, raw brownies and raw lemon cake. Ingredients and recipes may vary slightly according to ingredient seasonality and availability. On this course you will: • Learn about the benefits of raw food. • Gain an understanding of the 5 pillars of raw food preparation: juicing, blending, spiralizing, sprouting, fermenting. Learn the processes for making: o Raw soups. o Nut and seed cheeses for savoury dishes, such as quiche, pates and starters. We will be using cashews and sunflower seeds. o Marinated veg which can be used in soups, vegetable side dishes, starters, raw stir fries, etc. o Raw seed ‘bread’, crackers and wraps. o Raw cakes – nut bases, different fillings (cashew cheese cake, fruit puree and ganache), frostings and decorations. You will leave with lots of inspiration, handouts and extra recipes to carry on your raw food journey at home. All recipes will be vegan friendly. Some parts of the meal will be pre-prepared with a dehydrator. Please bring your own knife and chopping board. Please inform us about any food allergies prior to booking and Peggy will be in touch to advise.
