Kitchen Knife Making Course
This is a brilliant opportunity to experience the amazing process of knife making and you will leave with your very own handmade bespoke kitchen knife that will serve you for a lifetime. You will be guided through every stage of the day by Bladesmith Dave Brearey of Hand Forged Yorkshire.
Your experience will take place in my workshop in a forge in Horbury, Wakefield.
This course covers every aspect of making a kitchen knife from start to finish using the stock removal method.
After a short safety talk you will choose the design of your knife and handle material, your knife will be made from high carbon steel.
I will teach you how to use the variable speed belt grinder to shape your knife and bevel it. We will do some initial prep work on your handle before moving onto the heat treating process to harden the steel. Once we have your knife tempered and cleaned up we will epoxy the handle on and leave it to set while you enjoy a well earned rest.
Following your break I will show you how to shape the handle with the belt grinder and by hand sanding to produce a result that's both comfortable and looks great. Finally we will move on to sharpening your knife to ensure it performs as well as it looks

- Tempering of your knife
- Blade finishing & sharpening
- You will fit a simple style handle to complete your knife build.
This course is up to 6 hours
You must be 18 to take part in this experience.
Please wear clothes you don’t mind getting dirty and bring plenty to drink as there is no drinking water available on site.

There were to be 2 attendees for the knife making course with Dave (as well as 3 “axe’ makers with Andy!) however the other attendee didn’t tip up - this only enhanced the experience as it was 1 to 1 😁 for me. You choose the style of knife and the wood for the handle and then you are put straight to work firstly grinding the shape of your knife from a piece of steel with Dave guiding you all the way - you get shown what has to be done and then you are left to do it - you’re told when in doubt ask which I did and Dave explains how best to achieve the best result - the course is not slow but you don’t feel pushed, listen to the advice and you’ll be fine and at the end of the course you’ll have a very sharp knife (cuts through paper like a warm knife through butter). Heed the advice in previous posts - if it’s cold wrap up ‘cos it’s very cold in the forge, take food and drink.
Would I recommend the course - a resounding yes !
What a fun and unique creative experience I had yesterday! To make something as practical as a beautiful, razor sharp, chef's knife combined with crafting the hardwood handle made for a unique and very enjoyable experience. I have no hesitation in recommending the Kitchen Knife Course course to anyone who is keen to learn a new skill.
If you plan to attend in winter I recommend that you wear warm clothes and take a hot drink, food and drinking water. This is a non stop, full on, fascinating day and the knife you produce with Dave's expert guidance will have pride of place in your kitchen.

Great day making a knife with Dave. Good instruction and delivered with patience and enthusiasm. I ended up with a knife I am really happy with, that will serve me well for as long as I can be bothered to cook!

Bought this as a gift for my brother and he had a fantastic time. He said Dave was a great teacher who thoroughly explained everything and he couldn't believe the knife he made, he uses it every time I go round and shows it off.
What a fantastic day I had making chefs knives . I was under the excellent supervision of Dave , who explained everything fully on what to do and more importantly what not to do which helped put me at ease. I can fully recommend this as something to try as you walk away at the end with an amazing product , which you made , it doesn’t come better than that.
My only comment would be that this course needs to state what to bring in the way of drinks / food as non are provided and it would have helped to know this in advance , all I was told that there was no drinking water on site . But as I said this didn’t dampen my experience in any way at all .
